My sister got this recipe from cooksrecipes.com. Really good and extremely easy to make!
1/3 c finely chopped onions
1/4 c butter
2 c chicken broth
1 c long-grain rice
1/2 t salt
1/2 c chopped cashews (we just left them whole)
1/4 c chopped parsley
Melt butter in a large skillet, then saute onions over medium heat, stirring constantly, until tender.
Add chicken broth, rice and salt. Bring to a boil, cover, reduce heat and simmer 20 minutes, or until rice is tender and liquid is absorbed. Remove from heat, and stir in cashews and parsley.
