I made this chicken in my crockpot yesterday, and I decided to keep the carcass to make a chicken stock.

This was really easy, and since I used chicken stock or broth a lot, this will definitely come in handy!

Ingredients:
Chicken carcass
Onion
Celery
Carrot
Bay leaf
Oregano
Basil
Peppercorns
6-8 c water – enough to cover what’s in the crockpot

Directions:
Combine everything in the crockpot and set on low for 10-12 hours.

Strain the broth well. I divided mine into 2 cup and 1 cup increments, and placed them in the freezer for future use.
