DH and I really wanted to break in our new rotisserie for our grill this weekend. We had my dad and his wife, my sister, BIL and brother all over for dinner. So we decided we’d probably need 2 chickens… bad idea.
We started to cook these on the rotisserie, but it just didn’t work out for us. (Note to selves: don’t complicate things when you’ve never done it before.)
So, anyway, we ended up taking it off the grill and into the oven. It was still delicious, though. It was really moist and tender, and had a great flavor! (We’ll retry the rotisserie soon, with only one piece of meat). 🙂
I’ll just put the ingredient amounts for one chicken.
1 whole chicken – 4-6 lbs
1/2 c oil
2 T honey
2 T lime juice
1/2 t paprika
Seasoned salt to taste
1/2 t paprika
1/2 t seasoned salt
1 T oil
Pepper, to taste
Preheat oven to 350.
Prep the chicken by removing anything from the inside, and rinse.
Mix the 1/2 t paprika and seasoned salt and pepper with the tablespoon of oil in a small bowl. Your hands will get a bit messy here, but it’s worth it.
Use your hands to push up the skin so that you can slide your hands underneath it, on each side of the chicken. Now dip your fingers into the paprika mixture and rub it all over the chicken, underneath the skin.
In a small saucepan mix the remaining oil, paprika, seasoned salt and honey and lime juice. Set over medium heat until honey is melted and mixture is smooth.
Place the lemon inside the chicken – you may want to cut it in half or quarters.
Truss the chicken, then brush the honey mixture all over the chicken.
Place it on the rack of your broiler pan. Place into the oven for about 2 hours – until internal temp reaches about 170.
Every 20 minutes or so, pull out the chicken to brush on some more of the honey mixture.
