This is a really light dish with great flavor. It’s a really good side for a summertime meal. And it’s so easy! It takes about 10 minutes to throw together.

The original recipe called for peas, but we decided to skip them.

8 ou orzo
1/4 c olive oil & vinegar dressing (we just threw together our own – about 50/50 with some salt and pepper)
1 T lemon juice
1/4 c chopped fresh mint leaves
1 (4 ou) package garlic and herb Feta (we couldn’t find this, so we just used regular Feta and threw in some garlic)

Cook the orzo according to package directions. Drain and place in serving bowl.

Mix in remaining ingredients and serve warm!
