Recipe from Cooking Light
This was really good. It had some great flavor!
Some changes I made – obviously I used chicken instead of tofu. I actually used a can of chicken that we had sitting around, so I didn’t make any changes to how I cooked it.
I also only had enough fresh basil for the pesto coulis, so I just used dried for the ratatouille. I also only had dry thyme.
That’s about all I changed. J and I both liked it! He even went back for seconds and took it in his lunch today. 🙂
