I am keeping this week’s meals light and easy. I haven’t planned anything yet for the weekend, because I’m not sure yet what we’ll be doing.

Monday: Portobello & Black Bean Quesadillas
Tuesday: Mediterranean Tuna Salad (may use leftover rotisserie chicken for J)
Wednesday: Leftovers
Thursday: Penne w/ Spinach, Peppers & Beans (and maybe shrimp)
Friday: Leftovers
Weekend: Not sure yet
