Recipe from Spark Recipes

This was a really good, simple pasta recipe.  Great for a really quick weeknight meal.

Ingredients:
12 ou whole wheat or whole grain penne or other small pasta
1 T olive oil
1 medium onion, diced
2 garlic cloves, minced
1/2 (14.5 ou) can diced tomatos, drained
3/4 c chicken broth
6 ou fresh baby spinach or arugula
1/4 t salt
1/4 t pepper
1/2 c crumbled feta

Directions:
Cook pasta according to package directions.

Meanwhile, warm olive oil over medium high heat.  Add onion and cook for 4-5 minutes, until tender.  Add garlic and cook for another minute.  Add tomatos and broth and bring to a simmer for about 5 minutes, until tomatos soften and some liquid evaporates.

Use a large spoon to lightly crush tomatos.

Slowly stir in spinach – cook for about 2 minutes, until wilted.  Remove from heat.

Drain pasta and add into spinach mixture and toss well.  Season with salt and pepper.  I also added a bit of feta to the pasta as well as sprinkled a bit on each serving.
