This was a great side to the Potato Soup w/ Apples and Brie.  All I did was throw together some spinach, sliced apples, toasted walnuts and cranberries, and topped it with the below dijon dressing.

4 T lemon juice
1 T + 1 t sugar
1 T EVOO
1 T + 1 t Dijon mustard
1/2 t salt
1/2 t pepper

Whisk all ingredients together.
